We love mashed potatoes. They’re the perfect side dish!
As a picky eater, I often run into major problemas when it comes to eating at other people’s houses. On any holiday gathering, I’m usually limited on what I can have. It seems like there’s always the same things! Ham, deviled eggs, and a bunch of side dishes with endless amounts of mayo, all of which I wouldn’t get within 5 feet of. Luckily, there’s also ALWAYS mashed potatoes. That’s usually all my plate consists of. Over the years, I have experimented a lot with different recipes, and I came up with exactly what I look for in a great “mash”.
These are the best mashed potatoes we have ever had. And I think its safe to say, I am a mashed potato connoisseur. We hope you enjoy!
- 4 russet potatoes, peeled and cut in half
- 8 Tbsp salted butter, room temp
- 1 cup of sour cream
- 1 cup sharp white cheddar cheese, shredded
- 1 1/4 tsp minced garlic
- 1-2 Tbsp heavy cream or milk
- Salt and pepper to taste, about 2 tsp of each
- Cook potatoes in a large pot of salted water for about 20 minutes, or until tender. When potatoes are tender, strain them and transfer to a large mixing bowl.
- Add butter, sour cream, cheddar, garlic, and salt & pepper, and mash with a potato masher.
- Once combined, add heavy cream (or milk) 1 tsp at a time, until desired consistency. Serve immediately
