Tis the season, well, almost. Let’s make Cashew Brittle anyway!

It’s not quite the season yet but we couldn’t help but start making candy! Of course, it won’t last until then.

A traditional favorite is peanut brittle but….we want to make a tiny change. So, we used cashews instead of boring old peanuts.

This recipe is great if you want something homemade but also need it fast. It takes about 10 minutes and it’s all done in the microwave. All you need is a microwave safe bowl and a spatula or metal spoon.

First, you’ll want to combine your sugar, salt and corn syrup in your microwave safe bowl.

Microwave on high for 4 minutes. Then, stir in the cashews.

Put it back in the microwave for 3 minutes, stirring after each minute. It will lightly brown.

Add butter, baking soda and vanilla. It will foam, that’s normal.

Working quickly, spread it out onto a buttered baking dish or cookie sheet and spread to about 1/4 inch thick. We used the underside of another baking dish to smoosh it down (make sure to butter that too). Let it cool completely and break into pieces.

 Ingredients

  • 1 cup sugar
  • 1/8 tsp salt
  • 1/2 cup light corn syrup
  • 1 cup (heaping works) cashews
  • 1 Tbsp butter
  • 1 tsp baking soda
  • 1 tsp vanilla

 Directions

  1. Butter a 9×13 baking dish or cookie sheet.
  2. In a large microwave safe bowl, combine sugar, salt and corn syrup. Microwave on high for 4 minutes.
  3. Stir in cashews and microwave another 3 minutes, stirring after each minute.
  4. Add butter, baking soda and vanilla.
  5. Spread to 1/4″ thickness in pan. Let cool completely and break into pieces.
