The Idgie, a Fried Green Tomato Sandwich

One of our favorite movies of all time is Fried Green Tomatoes. I could watch it everyday, it never gets old. Talking about how we wish we could travel to the South, we wanted to make something inspired by our favorite movie. We named it after our favorite character: Idgie  Threadgoode.

Fried green tomatoes, a homemade spicy remoulade sauce, jack cheese and avocados sandwiched together in a french loaf. Honestly, it was the best sandwich I can ever remember eating. Thankfully, I had a bunch of green tomatoes hanging out in my garden. Now, I can’t speak for the rest of the country but here in California, we love our avocados.  So, we just had to add avocado. It added a nice creamy texture to the crispy tomatoes. It was absolute perfection. Literally, the best sandwich I’ve ever eaten.

The Idgie Sandwich
Serves 3
Warm fried green tomatoes, jack cheese and avocado slices, smothered in a spicy remoulade sauce.

For the tomatoes
  1. 3 medium green tomatoes
  2. 1 cup buttermilk
  3. 1 cup yellow cornmeal
  4. 1 Tbsp Creole seasoning
  5. 2 cups flour, divided
  6. vegetable or peanut oil
For Remoulade
  1. 1 cup mayonnaise
  2. 2 Tbsp Dijon Mustard
  3. 1 Tbsp lemon juice
  4. 1 Tbsp dried parsley
  5. 1 Tbsp Louisiana-style hot sauce
  6. 2 cloves garlic, minced
  7. 2 tsp capers, chopped
  8. 1 tsp Worcestershire sauce
  9. 1 tsp paprika
  10. 1 green onion, finely chopped
  11. 1/4 tsp salt
  12. 1/8 tsp cayenne pepper
For the sandwich
  1. 3 French bread loaves
  2. 6 slices jack cheese
  3. 1 avocado, sliced
Instructions
  1. FOR TOMATOES: Cut tomatoes into 1/4 inch slices. Sprinkle both sides with salt and pepper.
  2. Pour oil into a cast iron skillet to a depth of about 2 inches. Heat on medium until hot, about 350°.
  3. Gather three shallow dishes or pie plates. Fill one with 1 cup of flour, the second with buttermilk and the third with the cornmeal, Creole seasoning and remaining 1 cup of flour.
  4. Dredge tomatoes in flour first, then buttermilk and then dip into cornmeal mixture.
  5. Fry tomatoes in batches until golden brown, about 2 minutes. Drain on paper towels. (Can be kept in 200° oven to keep warm until ready to serve.)
  6. FOR REMOULADE: Combine all ingredients in a bowl and mix well.
  7. TO ASSEMBLE SANDWICHES: Place two slices of jack cheese in each French roll. Broil until cheese is melted and bread is warm and lightly toasted.
  8. Fill sandwiches with fried green tomatoes, topped with avocado slices and drizzle with remoulade sauce.
