Texas Sheet Cake

I know we said this about our Cheesecake Lime Squares but this cake is seriously…to die for! Like, ridiculously good. Write home about it good!

Also, pretty simple. We like things simple.

Here is what we used.

We combined the first three ingredients for the cake into a bowl. Flour, sugar and salt.

Then, set that aside and grab a saucepan. Melt your 2 sticks of butter.

Add the cocoa and stir together.

Now, add the boiling water and let it boil for about 30 seconds. After 30 seconds, remove the saucepan from the heat.

Grab the bowl with the flour mixture and pour the hot mixture over it.

Stir lightly.

Okay, at this point is where you’ll need the buttermilk. We didn’t have buttermilk but, thankfully, we found a little tip from  TPW. Here’s what to do if you find yourself without it also.

Pour just under 1/2 cup regular milk into a measuring cup. Add just enough regular vinegar to bring it up to 1/2 cup. Within seconds, it turns into buttermilk. It totally works!

Add the beaten eggs, baking soda and vanilla to the buttermilk.

Stir buttermilk mixture into chocolate mixture.

Pour into the sheet cake pan.

Pop it into the oven and bake for 20 minutes.

While that’s baking, you can work on your frosting.

The frosting also starts with melting the butter.

Add the cocoa and stir to combine.

When it’s mixed well, remove the pan from the heat.

Add the milk…

Vanilla…

and powdered sugar. Then mix well.

Lastly, add the chopped pecans and mix well.

When the cake comes out of the oven, pour the frosting over it while it’s still warm. The warmth will help the frosting spread out over the entire cake.

Cut into squares (or just take a fork to it while it’s still in the pan) and enjoy!

 Ingredients for the cake

  • 2 cups flour
  • 2 cups sugar
  • 1/4 tsp salt
  • 4 Tbsp cocoa (heaping)
  • 2 sticks butter
  • 1 cup boiling water
  • 1/2 cup buttermilk (see above if you don’t have buttermilk)
  • 2 eggs (beaten)
  • 1 tsp baking soda
  • 1 tsp vanilla

 Directions

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine flour, sugar and salt. Set aside.
  3. In a saucepan, melt your butter. Once melted, stir in cocoa. Add boiling water and continue boiling for 30 seconds then remove from heat.
  4. Pour butter and chocolate mixture into the bowl with your flour mixture and stir lightly.
  5. In a separate bowl, combine buttermilk, beaten eggs, baking soda and vanilla. Then, stir this mixture into chocolate mixture.
  6. Pour into an 18X13 sheet cake pan and bake for 20 minutes.

 Ingredients for the frosting

  • 1/2 cup finely chopped pecans
  • 1 3/4 sticks butter
  • 4 Tbsp cocoa (heaping)
  • 6 Tbsp milk
  • 1 tsp vanilla
  • 1 pound (minus 1/2 cup) powdered sugar

 Directions

  1. Melt butter in a saucepan. Add cocoa and stir to combine. Remove from heat.
  2. Add the milk, vanilla and powdered sugar; stir together.
  3. Stir in pecans and pour over warm cake.
