Stuffed Squash

So fall is in full effect and my vegetable garden is coming to an end. I had a ton of left over squash and I wanted to make something different.  My husbands great-grandma had a recipe for stuffed zucchini, but all I had left was the squash so I thought Id try that.  It was amazing! I think I like it better than the zucchini. The skin on squash is much thicker so the edible part comes apart easier. Try this recipe with both zucchini and squash and tell us which one you prefer.

Stuffed Squash

Ingredients
  1. 1 large yellow squash (2-3 lbs)
  2. 1 lb ground beef
  3. 1/4 cup onions
  4. 1/4 cup green bell pepper
  5. 1 jar favorite tomato sauce(We used Newman's Own Sockarooni, granny's fave)
  6. 1/2 cup mozzarella cheese
  7. 3 Tbsp grated Parmesan
  8. salt & pepper
  9. olive oil
Instructions
  1. Preheat oven to 350°. Brown beef in a large skillet along with onions and green peppers.
  2. Add tomato sauce and stir until evenly coated.
  3. Cut squash in half lengthwise and scoop out seeds and middle. Rub flesh with olive oil. Place in a deep baking dish. Season with salt and pepper.
  4. Spoon meat mixture into squash. Sprinkle mozzarella cheese on top.
  5. Bake covered for 1 hour, or until squash is tender. Depending on size of squash, this could take up to 2 hours. Sprinkle with Parmesan cheese before serving.
