Gazpacho is a delicious summertime soup. I know eating soup in the summer seems silly but gazpacho is served chilled. It’s a refreshing meal on a hot summer day.
We added a little heat to this soup with a spicy jalapeno. All the ingredients are fresh, some are even freshly picked! The tomatoes, cucumbers, jalapeno & basil came from my garden. This soup is delicious. You won’t be able to stop eating it! It’s super easy to make too. Just roughly chop all ingredients, put them in your food processor and hit the button. It’ll be ready to eat in about 20 seconds!

Ingredients
- 4 large tomatoes
- 1/2 cucumber
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 2 cloves of garlic
- 1/4 cup cilantro
- 1/4 cup fresh basil
- 1 jalapeno
- 1/8 cup red onion
- juice of 1 lemon
- 1 1/2 Tbsp apple cider vinegar
- 1 1/2 Tbsp olive oil
- salt & pepper to taste
- sour cream to garnish
- avocado to garnish
Instructions
- Chop all ingredients and place them in a food processor along with lemon juice, apple cider vinegar, olive oil and salt & pepper.
- Pulse until blended and purèed. Garnish with sour cream & avocado slices.
