Slow Cooker Pot Roast

My friend Ashley introduced me to this recipe a couple of months ago and I was totally impressed. It’s THE BEST pot roast I’ve ever tried. I can remember pot roast being made every so often in my house when I was a kid, and I liked it, but I don’t remember it being anything too special (sorry mom!) This recipe is delicious and full of flavor, and is insanely easy.

Fall is just around the corner, and this is definitely cozy fall comfort food. It’s not quite the fall weather here, but we cranked the air, stuffed the crock pot, and were happy little peeps!

 We served the Pot Roast with our favorite White cheddar garlic mashed potatoes and it was perfect!

Ingredients
  1. 3-4 pound beef chuck roast
  2. 1 packet of Italian dressing mix
  3. 1 packet of ranch dressing mix
  4. 1 packet of brown gravy mix
  5. 1 can of beef broth
  6. 1 onion, coarsely chopped
  7. 3 carrots, coarsely chopped
  8. 4 small red potatoes, coarsely chopped
  9. 2 Tbs olive oil
  10. salt, pepper and garlic powder to taste
Instructions
  1. Begin by browning the roast. We seasoned it with salt, pepper, and garlic powder. Heat 2 tablespoons of olive oil in a large skillet and sear all sides of the roast. (You are not trying to cook it, you are just browning it a little)
  2. Once browned, put the roast in the crockpot.
  3. Then add your dry ingredients. Empty all three packets over the roast and pour the can of beef broth over to liquefy the seasonings.
  4. Finally, add the vegetables.
  5. Cover and cook on low for 7-8 hours. (You will know the roast is done when it starts to fall apart)
