Salsa Verde

We love salsa of all colors. This one is especially good. Made with tomatillos instead of tomatoes, it’s fresh, delicious and something a little different. It’s yummy with tortilla chips or smothered on a burrito or stuffed in a taco or..or…the possibilities are endless…..yummmm!

Ingredients
  1. 4-5 tomatillos
  2. 1-2 jalapeno peppers (more or less depending on how hot you want it)
  3. 2 garlic cloves
  4. 3/4 cup onion
  5. 1/4 cup cilantro
  6. salt to taste
Instructions
  1. Put tomatillos in a large pot and cover with water. Bring to a boil. Reduce the heat and simmer uncovered, until their color has changed and they are cooked and soft but not falling apart, about 10 minutes.
  2. Add tomatillos, peppers, garlic, onion and cilantro to a food processor and pulse until pureed.
  3. Taste and salt as needed.
Notes
  1. Store in refrigerator. Tomatillos have a naturally high pectin content so when chilled this salsa tends to thicken. Just add a little bit of water before serving to thin it out.
