We love salsa of all colors. This one is especially good. Made with tomatillos instead of tomatoes, it’s fresh, delicious and something a little different. It’s yummy with tortilla chips or smothered on a burrito or stuffed in a taco or..or…the possibilities are endless…..yummmm!

Ingredients
- 4-5 tomatillos
- 1-2 jalapeno peppers (more or less depending on how hot you want it)
- 2 garlic cloves
- 3/4 cup onion
- 1/4 cup cilantro
- salt to taste
Instructions
- Put tomatillos in a large pot and cover with water. Bring to a boil. Reduce the heat and simmer uncovered, until their color has changed and they are cooked and soft but not falling apart, about 10 minutes.
- Add tomatillos, peppers, garlic, onion and cilantro to a food processor and pulse until pureed.
- Taste and salt as needed.
Notes
- Store in refrigerator. Tomatillos have a naturally high pectin content so when chilled this salsa tends to thicken. Just add a little bit of water before serving to thin it out.
