I did something terrible.

I made Cookie Butter Ice Cream….

It doesn’t sound terrible but I assure you, it IS! The deliciously creamy cookie butter ice cream with ribbons of more cookie butter and little clusters of cookie crumbs will make you feel like all is right in the world and then….it will ruin you! You’ll spend every free minute eating cookie butter ice cream and binging on Pretty Little Liars on Netflix. You’ll have 3 1/2 seasons left and you will run out of cookie butter ice cream. So, then you have to make more, of course, but when you go to get the cookie butter, it’s all gone! You go to three stores looking for more only to find that it’s out of stock everywhere and you will have wasted an entire day not being able to eat cookie butter ice cream or find out what A is up to next on Pretty Little Liars! Oh, what a travesty!

Well, that is what happened to me when I first tasted this ice cream but it might be a totally different experience for you. Who knows, you might taste it and then go about your day like it was any other.

Bicoff cookies and Speculoos cookies are pretty much the same. Speculoos is basically the generic brand of Biscoff, a delicious Belgian cookie. I prefer Biscoff Spread to Cookie Butter because it taste exactly like the cookie. Speculoos Cookie Butter is sweeter and doesn’t taste exactly like the cookie.

Ingredients
  1. 1 cup Biscoff Spread or Speculoos Cookie Butter (I prefer Biscoff)
  2. 1/2 cup granulated sugar
  3. 2 tsp vanilla extract
  4. pinch of salt
  5. 2 cups half and half
  6. 1 cup heavy cream
For the swirl
  1. 1/2 cup Biscoff Spread of Cookie Butter
  2. 6-8 Biscoff or Speculoos cookies, crumbled
Instructions
  1. In the bowl of an electric mixer, cream together Biscoff and sugar on medium speed until combined. Stir in salt and vanilla.
  2. Turn mixer to low and slowly add half and half and heavy cream until the mixture is combined and smooth.
  3. Pour mixture into an ice cream maker and process until thick, about 20-30 minutes. While churning, mix together 1/2 cup Biscoff and cookie crumbles until combined. Set aside.
  4. Transfer about 1/3 of ice cream to a storage container. Spread 1/2 of Biscoff and cookie crumble mixture on top. Add another 1/3 of ice cream and last half of Biscoff crumble mixture on top. Top with remaining 1/3 of ice cream. Use a spoon to fold layers together, using only 4-5 strokes. You don't want to mix it all together, you just want to create a bit of a swirl. Cover and freeze until firm.
Notes
  1. Biscoff and Speculoos Cookies are the same. Speculoos is basically the generic brand of Biscoff. They are both sold as cookies and spreads. I prefer Biscoff spread to Cookie Butter because it tastes just like the cookie.
