Pasta Pestomato

It’s always so convenient to boil some pasta and add a jar of prepared sauce. This recipe is just as convenient. It takes about 15 minutes from start to serve. Which is about the same as boiling pasta, heating up a canned sauce and serving. It’s very easy and homemade! The only prep work involved is chopping a tomato. That takes less than a minute. Let’s get started.

Start by boiling your pasta. Don’t forget to salt the water.

Add two tablespoons of butter to a saucepan and melt.

Add 1 cup of heavy cream.

Add chopped tomato.

Then add salt and pepper and garlic powder to taste. Cook on low for 10 minutes. Stir frequently so the sauce doesn’t boil.

Using a fork, mash up the tomatoes so they are not so chunky. This should be really easy since they have been cooking for 10 minutes. After mashing, your sauce should look like this…

Stir in 2 1/2 tablespoons of your favorite pesto sauce.

Add your cooked pasta to the sauce and toss.

Sprinkle Parmesan over the top and serve.

You can also try adding chopped chicken to this pasta or even shrimp. Yum!

 Ingredients

  • 3 cups penne pasta
  • 2 tbsp butter
  • 1 large, fresh tomato, chopped
  • 1 cup heavy whipping cream
  • 2 1/2 tbsp pesto sauce
  • salt and pepper, to taste
  • garlic powder, to taste
  • Parmesan to garnish

 Directions

  1. Add penne to salted, boiling water.  Boil until al dente, about 10 minutes, and drain.
  2. While pasta is cooking, melt 2 tbsp butter in a large saucepan. Add 1 cup heavy cream, chopped tomato and seasonings. Cook for 10 minutes on low, stirring frequently. (do not allow to boil)
  3. Using a fork, break up the tomato chunks by mashing them into the pan, releasing the some of the juices.
  4. Stir in 2 1/2 tbsp pesto. Add cooked pasta to saucepan and toss. Serve immediately. Sprinkle Parmesan over pasta.
