Long Beach // Lola’s Mexican Cuisine – Recreating their Cuetes at home.

We recently had lunch at Lola’s Mexican Cuisine in Long Beach, CA. It’s located in the Retro Row section of 4th street. The Day of the Dead decor in the restaurant makes it a perfect fit for the neighborhood.

The menu is impressive. It’s not your typical Mexican fare. They have vegetarian options likes the potato taquitos and even a vegan burrito. When you are seated they bring you chips, salsa and a green sauce. No one would tell us what it is. It is so good that it’s ingredients are top secret.

This is what we dined on.

Lola’s Cuetes (bacon wrapped jalapenos): Amazing! We devoured these. They were spicy!

Potato Taquitos: So delicious! Drizzled with sour cream and enchilada sauce and then topped with cheese and guacamole. The outside was crunchy and the inside was soft and so full of flavor. They were perfect.

Enchiladas Suizas: Two cheese enchiladas covered in their delicious green salsa and cheese and then topped with sour cream and avocado slices. It came served with beans and rice. The beans were outstanding! We would definitely order this again.

We were so impressed by the Cuetes at Lola’s that we decided to try to make them ourselves. They were delicious but…not quite the same.

These will satisfy our hunger for them until we can get to Lola’s again.

Makes 8

Ingredients

  • 4 jalapenos
  • 6 – 8 Tbsp cream cheese
  • 1 cup mexican cheese mix
  • 8 strips of bacon

Directions

  1. Preheat oven to 375°.
  2. Cut jalapenos in half lengthwise and remove insides and seeds. Lay them out on a greased baking sheet.
  3. Fill each one with cream cheese then sprinkle the Mexican cheese on top.
  4. Wrap one strip of bacon around each jalapeno. Secure with toothpick if needed.
  5. Bake for 20-25 minutes. If bacon isn’t as cooked as you’d like, turn broiler on until you reach desired crispiness.

    If you ever come up with something that comes close to that green salsa, PLEASE let me know. They told me it was vegan, but that’s as far as they would go. I’m going to try to replicate with mayo (vegan mayo), lemon, cilantro, green chiles (canned), garlic, salt…. We shall see!

    Hi, so I have also been obsessed with Lola’s for uears and have been trying to make their cuetes, I think they put a little bit of cooked finely cut onions in them, they won’t tell me either and I make my own and keep forgetting to try with onions, but I bake my jalapenos first for about 10 minutes it makes them softer and less spicy and I cook the bacon in pieces then add it to the cream cheese and either smoked gouda or sharp cheddar cheese then stuff jalapenos and bake till cheese is bubbly so yummy
