Lemon Fudge

Fudge is one of  my favorite things. Chocolate fudge is sometimes a little too rich so we wanted to make something a little lighter…and easy to eat a ton of! So watch yourself with this one. 

Fudge is a great gift! This recipe makes about 2 lbs so you can easily divide it and make several people happy.

Ingredients
  1. 6 Tbsp butter
  2. 2 packages (12 ounces each) vanilla or white chips
  3. 2/3 cup sweetened condensed milk
  4. 2/3 cup marshmallow creme
  5. 1 1/2 tsp lemon extract
  6. melted chocolate for drizzling (optional)
Instructions
  1. Line a 9 inch square pan with foil, leaving 2 inches over the edges. Grease or spray with non-stick spray; set aside.
  2. In a large saucepan, melt butter over low heat. Add chips and condensed milk. Cook and stir for 10 minutes or until chips are completely melted.
  3. Stir in marshmallow creme and lemon extract. Cook and stir 3-4 minutes longer or until smooth. Pour into prepared pan. Chill until set.
  4. Using foil overhang, lift fudge out of pan. Cut fudge into squares. Drizzle with melted chocolate if desired. Store in the refrigerator.
