My name is Nichelle and I have an addiction. It’s nothing hardcore (debatable) and nothing that I’ll need to enter rehab for but it’s an addiction nonetheless.
I am an iced coffee addict. I can rarely go a day without drinking one and when I can’t get my hands on one, I think about it all day long. It’s terrible. It was raining this morning but I still needed one. Hot coffee is just not the same. I need it cold! I used to run to the local coffee joint to get my fix but there were times when, with two small children, it just wasn’t a possibility. So, I started making them at home. I would brew my coffee at night and refrigerate it until morning. I’d add my vanilla syrup and a splash of milk and I’d be okay for the rest of the day. Then, one day, something terrible happened…I ran out of vanilla syrup! I had to get creative and make my own to get my fix.
Homemade vanilla syrup is not only cheaper than the store bought stuff but I like it way more! I figured out it’s good for lots of other things too! Not only can I use it for my coffee but it’s great tea, desserts and cocktails. I will NEVER buy vanilla syrup again.
- 1 cup water
- 1 cup + 2 Tbsp sugar
- 3 Tbsp vanilla
- In a medium saucepan, stir together water and sugar over medium heat until sugar is completely dissolved, stirring constantly.
- Remove from heat and stir in vanilla. Allow to cool and pour into a sterilized container. Use as needed.
- To store: I store mine next to my coffee maker and usually go through it in about a week. I sometimes make a double or triple batch so if I know I won't use it in a week, I store it to the refrigerator. I've had bottles in the refrigerator for several weeks before and I've never had any go bad.
