Creamy Tomato Soup with Tortellini

This soup was a huge hit. I made it a few days ago when I had some girlfriends over and they loved it! I’m a huge fan of tomato soup and this is a spruced up version of the classic. Creamy Tomato Soup with Tortellini

The original recipe called for 1/4 cup of chopped sun dried tomatoes, which we weren’t feelin’ at the time. If that sounds like something you’d like, throw those in too.

Ingredients
  1. 1 tsp minced garlic
  2. 2 Tbsp olive oil
  3. 2 10 3/4 cans of Campbell's tomato soup
  4. 2 cups of half and half
  5. 2 cups of chicken stock
  6. 1 tsp onion powder
  7. 1 tsp Italian seasoning
  8. 1/2 tsp salt
  9. 1/2 tsp pepper
  10. 1 9oz package of cheese tortellini
  11. 1/4 grated parmesan cheese (optional)
Instructions
  1. Sauté garlic with the olive in a large pot over medium heat until garlic is fragrant and slightly brown
  2. When garlic is done, add tomato soup, half and half, chicken stock, and seasonings.
  3. Bring to a simmer, about 5 minutes (do not boil)
  4. Once simmering, add the tortellini and cook according to the package directions
  5. Once the tortellini is cooked, serve and garnish with parmesan cheese if desired.
