Cilantro Lime Rice

If you’re looking for something new and delicious to serve on taco night, this is the dish for you. We did some minor tweaking to get it just right for our taste, but we think it’s pretty spot on.

  2. Add rice, salt and the juice from 1 lime, and stir for 2 minutes
  3. Add the water and bring to a boil, then turn down heat and simmer on low
  4. Cover and cook for about 20 minutes, or until tender
  5. While the rice is cooking, put together rest of ingredients. In a small bowl, add juice from 2 limes, 2 Tbsp of olive oil, and cilantro

Notes
  1. *We used about 3 1/2 limes total for this recipe. Start with using 1 lime when cooking the rice. When making the cilantro lime mixture, start by using 2 and add more lime juice as needed.
