Cilantro Lime Rice

If you’re looking for something new and delicious to serve on taco night, this is the dish for you. We both love Chipotle rice, and after some serious searching of the internet, we think we’ve found the closest thing to it. We did some minor tweaking to get it just right for our taste, but we think it’s pretty spot on.

Cilantro Lime Rice

Ingredients
  1. 2 cups white rice
  2. 4 cups water
  3. 1/2 cup cilantro (chopped)
  4. 3-4 limes*
  5. 1 1/2 tsp salt
  6. 1 Tbsp butter
  7. 2 Tbsp olive oil
Instructions
  1. In a large saucepan, heat 1 Tbsp of butter
  2. Add rice, salt and the juice from 1 lime, and stir for 2 minutes
  3. Add the water and bring to a boil, then turn down heat and simmer on low
  4. Cover and cook for about 20 minutes, or until tender
  5. While the rice is cooking, put together rest of ingredients. In a small bowl, add juice from 2 limes, 2 Tbsp of olive oil, and cilantro
  6. When rice is is done cooking, add the cilantro lime mixture and stir until combined
  7. Serve immediately
Notes
  1. *We used about 3 1/2 limes total for this recipe. Start with using 1 lime when cooking the rice. When making the cilantro lime mixture, start by using 2 and add more lime juice as needed.
