Makes 1 pie
Ingredients
For crust
- 16 Oreos, broken into pieces
- 2 Tbsp unsalted butter, melted
For filling
- 1 cup heavy cream, cold
- 3 eggs
- 3/4 cup sugar
- 2 Tbsp water
- 8oz bittersweet chocolate, melted and cooled
- 1 Tbsp vanilla
- 8 Tbsp unsalted butter, softened and cut into squares
For whipped topping
- 1 cup heavy cream, cold
- 2 Tbsp powdered sugar
- 2 Tbsp vanilla
- chocolate shavings for garnishing (optional)
Directions
- To make crust: Preheat oven to 350°. Pulse Oreo pieces in a food processor until fine. Add butter and use fingers to combine until butter is evenly distributed.
- Press crumbs firmly into the bottom and sides of a 9-inch pie plate to form the crust. Bake for about 10 minutes, until fragrant and set. Cool while preparing filling.
- To make filling: In the bowl of a stand mixer fitted with the whisk attachment, whip heavy cream until stiff peaks form. Refrigerate while preparing the rest of the filling.
- Combine eggs, sugar and water in a heatproof bowl set over a pot of simmering water. With an electric mixer, beat until thickened and a candy or instant thermometer reads 160° (7-10 minutes). REmove from heat and continue to beat until fluffy and cooled (6-8 more minutes).
- Add the melted chocolate, vanilla and butter to the egg mixture and beat until combined.
- Fold in the refrigerated cream until there are no more streaks. Transfer to cooled pie shell and refrigerate.
- To make whipped topping: In the bowl of an electric mixer with the whisk attachment, combine heavy cream, sugar and vanilla. Beat on high until you reach desired consistency.
- Spread over chocolate filling, garnish with chocolate shavings if desired and refrigerate until ready to eat.
