Chocolate Eclair Dessert

I watched the contestants make eclairs last week on MasterChef and I felt really intimidated. How do they just know how to make something like that off the top of their heads? It’s crazy.

Here is my take on an easy eclair-like dessert. Not too much technique involved but delicious all the same. Any one can make it and everyone will love it!

For filling
  1. 1 sleeve graham crackers
  2. 1 box french vanilla instant pudding
  3. 1 1/2 cups whole milk
  4. 1 cup heavy cream
  5. 2 1/2 Tbsp sugar
  6. 1 tsp vanilla
For topping
  1. 1/3 cup cocoa
  2. 1 cup sugar
  3. 1/4 cup whole milk
  4. 1/2 cup (1 stick) unsalted butter, softened
  5. 1 tsp vanilla
Instructions
  1. For filling: Combine pudding mix and 1 1/2 cups of milk in a bowl; set aside.
  2. In a large bowl, beat heavy cream until thick and whipped cream-like. Add sugar and vanilla and mix well. Stir in pudding.
  3. Place a layer of graham crackers in the bottom of a 9x13 dish. Spread half of the filling over the crackers.
  4. Place another layer of graham crackers over the filling. Cover that layer with the remaining half of the filling.
  5. Top the filling with a final layer of graham crackers.
  6. For the topping: Bring cocoa, milk, and sugar to a full rolling boil. Boil about 1 minute, stirring very frequently. Remove from heat and cool one minute.
  7. Add butter and vanilla; stir until butter is melted completely.
  8. Pour chocolate over the graham crackers. Refrigerate or freeze overnight.
Notes
  1. Freezing this dessert allows you to cut it into squares. Allow to soften at room temperature for 20 - 30 minutes before devouring.
