I watched the contestants make eclairs last week on MasterChef and I felt really intimidated. How do they just know how to make something like that off the top of their heads? It’s crazy.
Here is my take on an easy eclair-like dessert. Not too much technique involved but delicious all the same. Any one can make it and everyone will love it!

For filling
- 1 sleeve graham crackers
- 1 box french vanilla instant pudding
- 1 1/2 cups whole milk
- 1 cup heavy cream
- 2 1/2 Tbsp sugar
- 1 tsp vanilla
For topping
- 1/3 cup cocoa
- 1 cup sugar
- 1/4 cup whole milk
- 1/2 cup (1 stick) unsalted butter, softened
- 1 tsp vanilla
Instructions
- For filling: Combine pudding mix and 1 1/2 cups of milk in a bowl; set aside.
- In a large bowl, beat heavy cream until thick and whipped cream-like. Add sugar and vanilla and mix well. Stir in pudding.
- Place a layer of graham crackers in the bottom of a 9x13 dish. Spread half of the filling over the crackers.
- Place another layer of graham crackers over the filling. Cover that layer with the remaining half of the filling.
- Top the filling with a final layer of graham crackers.
- For the topping: Bring cocoa, milk, and sugar to a full rolling boil. Boil about 1 minute, stirring very frequently. Remove from heat and cool one minute.
- Add butter and vanilla; stir until butter is melted completely.
- Pour chocolate over the graham crackers. Refrigerate or freeze overnight.
Notes
- Freezing this dessert allows you to cut it into squares. Allow to soften at room temperature for 20 - 30 minutes before devouring.
