Ok so it’s a new year, and of course probably like a lot of others, we are making some changes. I refuse to say I’m on a diet, because I’m not. Neither of us are. We’re just eating a little better.. We’re more aware..ya, that’s it! I was on the lookout for some healthier recipes and I stumbled across a Spanish rice that wasn’t actually rice, but cauliflower. Cauliflower Spanish “Rice”…Huh?!?! One time I made mashed “potatoes” with cauliflower in place of the potatoes, and I was recently reminded by someone how disgusting they were. It’s ok, they really were. But this sounded interesting so I gave it a shot. After some tests and tweaks to make this exactly how I like it, I can honestly say that not only was this “rice”  delicious, but you REALLY can’t tell you’re eating cauliflower. I won’t go as far as to say it tastes exactly like rice, because it doesn’t. But its really, really good. Not only did Nichelle and I love it, so did my G-ma, younger brothers who want nothing to do with cauliflower, and my mom who is a rice lover just like me. Please try this and let us know what you think. We are almost too excited about it.

Cauliflower Spanish "Rice"

Ingredients
  1. 1 head of cauliflower
  2. 1- 14 1/2oz can of diced tomatoes (with green chiles and spices)
  3. 1/2 cup of tomato sauce*
  4. 1/4 cup chopped cilantro
  5. 1/2 onion, finely chopped
  6. 1 tsp minced garlic
  7. 1 Tbsp olive oil
  8. 1/2 tsp chile powder
  9. 1/4 tsp cumin
  10. 1 tsp garlic powder
  11. 1 tsp salt or more to taste
  12. 3-4 dashes of hot sauce ( we used tapatio)
Instructions
  1. Roughly chop the cauliflower and pulse in food processor until rice like in size (do not over pulse, you don't want your "rice" too fine or it will be mushy)
  2. In a large skillet on medium heat, add onions to 1 Tbsp olive oil and sauté for about 5 minutes
  3. Next, add garlic and cook for about a minute more (careful not to burn it)
  4. Add the cauliflower and cook for about 8 minutes stirring frequently
  5. Next add the can of diced tomatoes (with some of the juice) and half the can of tomato sauce and stir all together
  6. Turn heat to low, and add seasonings and hot sauce, check for flavor
  7. Remove from heat, stir in cilantro and serve immediately
Notes
  1. We used HUNTS "no salt added" tomato sauce
