BLT Skewers

So during one of our recent brainstorming sessions, we wanted to come up with a cool and easy summer snack that would be a little different then the usual. Something that would be cool to bring to a BBQ, that wasn’t the same ‘ol fruit bowl or pasta salad. 

Nichelle’s mom makes these caprese skewers that are always a big hit. So we played off of that, and came up with BLT skewers! They were really, really good and super cute! Not having a drizzle or dip served with them didn’t seem right though. On your typical BLT, you get a slab of mayo on the bread. The problem for me personally is that I don’t do mayo. On my BLTs I always get honey mustard. I know, I know, there’s mayo in that. But since its a different color and I can’t taste it, I can let it slide. Weird, I know! But my phobia worked out in our favor, because it was exactly what these babies needed! The honey mustard was perfect!!! They were delish.

You can do what we did and make a little cup out of lettuce to put the dressing in, or you can drizzle it on with a fork. (Ok, We drizzled and dipped)

Ingredients
  1. 1 package cheese tortellini (You'll need 24. We used 1 Bertolli package and had leftovers.)
  2. 12 cherry tomatoes
  3. 1 head iceberg lettuce
  4. 1/2 lb. cooked bacon (not too crispy or it will break apart when you put the skewer through)
  5. 1/4 cup honey mustard
  6. 12 skewers
Instructions
  1. Cook your tortellini according to the package directions. When they are done, drain them and rinse with cold water to stop the cooking process. It will also help cool them off since they are much easier to skew when they aren't pipin' hot!
  2. Cut bacon slices into about 1 inch squares. You will need 24 squares of bacon; 2 per skewer.
  3. Cut bacon into pieces about the same size as your bacon, about 1inch squares.
  4. Time to assemble: skew one tortellini, followed by a tomato, then your lettuce, , add 2 bacon squares and finish it off with another tortellini. Repeat the process for all your skewers.
  5. Drizzle with honey mustard like we did or your favorite dressing.
