This birthday cake ice cream will have you wanting to celebrate all year long!  I have this theory that birthday cake flavor should be considered a comfort food. When you taste it, it brings back so many memories of childhood birthdays; balloons, noise makers, streamers, confetti, friends and of course cake! It’s, like, the best flavor ever.

My husband bought a quart of ice cream at Sprout‘s called birthday cake from a company called Alden’s. I fell in love with birthday cake ice cream. It was the most incredible ice cream I had ever had. We ate it straight out of the carton. Then, one day he went back for more…gone. I was devastated….almost like my blueberry muffin sadness. I had to make some. It seemed like the only option.

For my version of birthday cake ice cream, I used Funfetti cake mix to add that cake flavor. This ice cream is very thick with a rich creamy texture. I also added sprinkles for some color. The birthday cake flavor in this ice cream is immediately recognizable but not overpowering or too strong. It’s just right!

On a recent trip back to Sprout’s, we discovered that the birthday cake ice cream from Alden’s is back! I think we will stock up this time just in case.

Ingredients
  1. 1 cup whole milk
  2. 2 1/2 cups heavy cream
  3. 1 cup sugar
  4. 1/2 cup Funfetti cake mix
  5. 2 tsp vanilla
  6. pinch of salt
  7. 1/4 cup sprinkles
Instructions
  1. In a bowl, combine milk, heavy cream and sugar. Whisk vigorously. Add cake mix, vanilla and salt and continue mixing until well combined.
  2. Pour mixture into the freezer bowl of an ice cream maker and allow to churn until thick, about 25 minutes. In the last five minutes, add sprinkles.
  3. Transfer to an airtight freezer-safe container and freeze overnight.
